Bases, footings and where the oven sits

The oven goes at one end of the island or on its own base beside it, never in the middle of a run where its heat and smoke land on the grill cook. A built-in dome sits on a reinforced concrete hearth slab over a block stand, with a layer of insulating board between the hearth and the oven floor so heat stays in the oven rather than in the base. On an older patio slab the stand gets its own footing.

Chimney, clearances and the fire zone

Wood-fired ovens need a flue tall enough to draft and to carry sparks above the eaves and any patio cover, with a spark arrestor cap. Clearances to combustible walls, overhangs and fences follow the oven maker's instructions. Much of Canyon Country, Castaic, Val Verde and the canyon edges of Saugus and Newhall sits in a Very High Fire Hazard Severity Zone; a wood-burning oven there is planned with the chimney cap, the distance to brush and local burn restrictions in mind, and a gas oven or a gas insert is often the simpler choice. California's ember-resistant rules for the first 5 feet around a home ("Zone 0") and the Fire Department's defensible-space rules also affect where a wood-burning oven can go.

A gas pizza oven on the island's line counts toward the total BTU load, so the pipe is sized for the grill, burners and oven running together.

Curing and first fires

A new refractory oven holds water from its mortar and stucco. It is cured with a series of small fires over several days, each a little hotter, before the first full-temperature bake. Skipping the cure is the usual cause of cracks in the dome shell. Gas countertop ovens need no cure beyond the maker's first burn-off.

A pizza oven rewards patience twice: once during the cure, and every time it is preheated.
